Our Bali Blue Moon is a fantastic full-bodied coffee from this hidden jewel island east of Java in Indonesia. It's our darkest roast and the favorite coffee for our customers looking for a roasty, velvety cup that lingers on the palate. Our dark roast highlights flavors of baker's chocolate & vanilla bean.

Bali Blue Moon is named after the bluish hue of the bean produced from the wet-hulling process called Giling Basah in the Indonesian language. This coffee comes from small family farms where each producer uses a few acres to cultivate coffee along with citrus trees in the volcanic soils of Mount Agung in the Kintamani highlands.

 They hand sort their harvested cherries before depulping and fermenting with their own micro-mills. The coffee is washed and laid out on patios to shed the excess water from the coffee parchment. Next the coffee takes a detour from the conventional path of processing in other origins, wherein, the coffee parchment is removed while the coffee still has a high moisture content. This "wet-hulling process" or Giling Basah leaves the coffee bean exposed while drying on patios to the ideal moisture content for export and gives the beans their distinct bluish color.

Balinese producers continue to maintain a traditional rural lifestyle organized around a Subak Abian, which is a reference to the ecologically sustainable irrigation systems developed more than 1,000 years ago by Hindu priests who practice Tri Hita Karana (the three sources of prosperity).

Overall a pleasing cup of coffee

I ground these beans at a medium espresso grind to be used in a halo pour through. First sip right after being made is amazing. Very bright initial taste. Definitely bakers chocolate initial burst. However, as you sit with the cup the coffee flavor does not linger. You get that immediate bright taste that rapidly disappears, with no lingering finish, no discernible taste.

coffee is really flavorful, very very dark, & definitely has the bitter-sweet bakers chocolate notes. Which despite being good, has been why I have a slight hesitation to give higher rating (since it can lean to the bitter side & easier to over-extract which only enhances the bitterness). good coffee overall though!
