We chose this select offering as a great introduction to a microlot processed by the anaerobic natural method at a very reasonable price. This lot boasts notes of melon and mild strawberry in a lush, creamy cup that's very approachable and not completely fruit driven. We love it's natural, cane sugar sweetness.
About the Farm: Miriam Quesada Enciso has owned her 3 hectare coffee farm, El Guayacan, for the past 15 years. El Guayacan is a beautiful specialty coffee farm located 1550 meters above sea level in Acevedo, Colombia. Miriam is a second-generation coffee grower and runs El Guayacan with her husband Libardo, who has spent his life producing coffee.
At El Guayacan, they strive to continuously improve and evolve their processes to deliver the best quality coffee possible. The cherries are handpicked from the trees and they give incentives to the pickers to get the best quality, ripe cherries. For this anaerobic lot, all processing was completed on the farm.
What is the Anaerobic Natural processing method
This small lot was processed using the relatively new anaerobic natural process where coffee is fermented without oxygen. This distinct fermentation method results in complex, exotic flavors because of the different acids it creates. During this process, anaerobics are placed in sealed tanks that are pressurized from CO2 buildup. This additional pressure forces more juices and sugars into the coffee. The remaining pressure and oxygen are let out using releasing valves. As you can imagine, there is a considerable amount of meticulous attention to detail to produce this special coffee.
