Our first Pacamara varietal offering comes from producer Luz Merino and her small farm in the southeast corner of Ecuador, near the Peru border. Luz manages her farm on her own with a team of just 3 full time employees. Her meticulous attention to harvesting only fully ripe cherries and consistent patio drying, yields a really complex cup you would expect from a premium pacamara.  We recommend brewing as pourover to extract the complext flavors, bright acidity, and creamy body this coffee offers  We love the cinnamon-blackberry & sweet tart notes! 

What is Pacamara? 

Pacamara is a very unique coffee variety, first discovered in El Salvador and now a product of scientific breeding.  It's a cross between Pacas (a Bourbon mutation) and Maragogype (a Typica mutation). When cultivated properly, it yields intense flavors of cinnamon, sweet-tart fuits, rich chocolate and juicy citrus.  The beans are noticeably large and oval, and it takes great skill to roast properly and evenly.  We invite you to experience this exotic coffee while it lasts!
